  174. I just found a recipe at theveganstoner.com that I love. It's apples, red peppers and chickpeas in a sweet and sour tahini dressing. It's so good and I love not using the stove or oven!

  175. My favorite is a quick thing, with no oven and almost no burners working, so keeps the house cool, too! In the meat section of the grocers they sell Tyson already cooked meats, I think it's 17 oz. packages. I have a large family so I double this for the 9 of us, but normally you would use 1 package of the Pork Roast (it either says "with au jus" or "with gravy" on it, can't remember exactly). Heat it per directions for 4 minutes in the microwave. When done, pour it in a bowl and use 2 forks to shred the meat. It shreds really easily. Stir in one can of seasoned black beans (don't drain), and 2 Tbs. of Goya Sofrito (spanish tomato sauce, sold near the tacos/spanish food). Mix those three things up. You need all three. I add sauteed onions at this point, but you don't have to. Stir well and serve over cooked egg noodles or pasta/rice of your choice. Whole thing takes 10 minutes to make and is a terrific, cuban-style dinner.

I add a little bit of olive oil mayo and a fair amount of Italian salad dressing, and top it off with a dash of black pepper. It keeps in the fridge for much longer than how long it takes us to eat, and is so cool and refreshing on a hot day.
